I finally got my hands on some St. George Raspberry Brandy yesterday. I’ve been keeping an eye out for it, the pear brandy, and the raspberry liqueur. I expected to find pear brandy before any of the others but I’ll take it.
The smell is HEAVEN…straight raspberry! This cocktail comes from St. George’s Cocktail Inspirations via Jennifer Knott of 312 Chicago in Chicago. If Irish whiskey needs a Valentine’s Day cocktail identity, this is the ticket. It’s fresh, fruity and vibrant…it has a lightness uncharacteristic of stirred boozy drinks.
Lacey’s Dream
1/2 oz St. George Raspberry Brandy
1 1/2 oz Irish Whiskey
1/2oz Pierre Ferrand Dry Curaçao
4 dashes of Fee Brothers peach bitters
Stir with ice and strain into a chilled coupe/Nick & Nora glass. A raspberry garnish would be perfection.

Also, I feel super justified in my previous correlation of peach bitters with Irish Whiskey…somehow they go beautifully together. That reminds me…I might need to make this again with IronRoot The Celt.
